There are records of cheeses going back thousands of years, and many of the varieties eaten today were being made in ancient times. Cheese is a high protein food that is made from the milk of various animals, most often cows but also goats, sheep, and buffalo. It is made by allowing the milk to coagulate, or turn into solids. These are then separated and pressed into the final form, or processed in various ways.     There are thoudsands of kinds of cheese produced in many different countries. Their flavors and styles depend on the origin of the milk, how much fat it contains, and how the cheese is manufactured. Flavors are often obtained by adding herbs and spices, or by smoking the cheese in some way. For a dairy foodstuff, cheese can last quite a long time, with harder varieties generally lasting longer than softer ones.    Hard cheese have been pressed to remove as much moisture as possible, which ensures the product will last longer. Allowing such cheese to mature may result in a stronger flavor. Italian Parmesan or vintage Cheddar, for example, maybe be matured for more than two years. Soft cheeses, on the other hand, are made to be eaten quickly, for they will soon go bad. They include cheeses such as cottage cheese, cream cheese, Ricotta, and Mozzarella. There are also some types known as blue cheeses. They are so called because a blue mold is added to them at various stages during the manufacturing process. Doing this means that a strong-tasting cheese can be produced within a few months.
