They are famous fortheir hot and spicy dishes that send curious foreign visitors runningfor water, so why is it that people in tropical regions have such aliking for spicy dishes? Sincefresh foods perish quickly in hot weather, using spices is apractical way to cover that taste of food that is going bad. Foodthat is starting to go bad masked by spices not only tastes better,but is also healthier, because spices kill off many harmful microbes.That is because there are antibiotic properties in hot peppers thatmay contribute to good health in other ways, too. Butif tropical heat depresses appetites, what good are spices if onedoesn’t feel like eating? Peppers come to the aid again; theyincrease appetite by stimulating digestive juices. In addition,peppers cause sweat, thus cooling people down as the sweatevaporates. It’s no wonder, then, that spicy food is on everyone’splate. Thespicy properties of peppers evolved as protection against animalsthat would otherwise eat them. Birds are the exception. Not sensing apepper’s fiery flavor, birds can devour the fruit comfortably, andas a result, they do pepper plant a favor by passing on whole seedsthrough their bodies. Withhumans, however, the pepper plant’ evolutionary defense mechanismshave backfired. We enjoy peppers because of their spicy flavor and wegrow a variety of them to suit all tastes. The jalapeno, for example,is a popular ingredient in Mexican dishes, while chilies are used tospice up Thai cuisine. Surprisingly,however, pepper seeds aren’t spicy. Capsaicin, the chemical thatgives peppers their zip, is found in the thin skin inside peppers.Though capsaicin levels can’t be accurately gaugedfrom appearance alone, the color and shape of the peppers are goodindicators of their flavor. Bright red peppers with pointy ends aresure to bring on tears—tears of pain to some, but tears of joy tothose who like their spicy dishes hot!
